Why Do Volunteer Sign-Up Lists Display Volunteers Full Name?

When members add their name to a Sign-up List, the input form requests only the volunteer's first and last name. However on the Sign-up List, the members full name, including their middle name, is listed. Some members are sensitive about this it seems. Is this hard-coded into the software or is their an option I can chose to display only the first and last name. If the former, can this be changed please? Ps. Please ignore my middle name in the example below.
